The Chef Operator is responsible for all aspects of their restaurant: food quality, staffing, P&L, daily specials, compliance, and (super importantly) good vibes. Good Chef Operator's have their maintenance man on speed-dial, excel formulas memorized, and know the difference between a brunoise and a batonnet. Their knack for numbers is rounded out by culinary expertise and a desire to create an awesome restaurant experience. Chef Operator's are particularly passionate about bettering the food system and crushing DOH inspections, (and probably fairly fond of homebrewed kombucha).
